Last Monday my doctor pronounced me allergic to not only gluten, dairy, and eggs, but also soy and some other random things like cucumber, asparagus, honey . . .
I took the news in a very bittersweet way. When I saw the list I looked at her in disbelief and said, "You know these are ALL the things I eat, right?"
On the other hand, I'm so excited to be a healthier, happier, more energetic version of myself! How can that NOT sound awesome to someone. To finally hear, "We know why you feel crappy and we know exactly what you can do to fix it!"
So about one week has gone by. It's been hard for sure. The hardest thing has been pizza and milkshakes - two of my favorite foods. I didn't anticipate eggs being the most frustrating allergen either. A lot of things can be made without gluten or dairy, but eggs are very common. It's very expensive to do baking yourself, so I'm hoping to just stick it out on my limited, more raw diet instead of buying ingredients to bake.
I've already started feeling better. My energy level is great! I've never been this energized for so long. And I love it - naturally.
So we'll see how it goes. I'm hoping to be able to reintroduce some foods later after my insides have healed from the abuse I've been putting them through. Poor little things. There's light at the end of my culinary tunnel!
Very sad - I haven't been able to have much coffee because it's impossible for me to divorce creamer from it's soulmate coffee. Hence, the tea this morning at work.
So begins my allergen-free journey! (Prayers appreciated)
